1 lb. lean ground beef
½ cup sweet onion, chopped
½ cup green bell pepper, seeded and chopped
1 cup crushed saltine cracker crumbs
1 egg – lightly beaten
3/4 cup catsup
Salt and pepper – to taste
1 lb smoked sliced bacon (Most Important!)
Combine and mix well all ingredients, EXCEPT bacon. Line one side of a grill basket with ½ lb. of bacon so the bacon lies across in the opposite direction of the basket wires, place meatloaf mixture on top of bacon. Cover meatloaf mixture with the other half of the bacon running it so it lies across in the opposite direction of the basket wires. This is so the meatloaf will not fall out of the grill basket when flipped over. Close grill basket.
Grill over medium hot coals to brown the bacon, flip over and grill other side until brown. The bacon renders throughout the meatloaf adding a smoky flavor.
